Ever hate to open that good bottle of wine because you KNOW you are only going to drink half of it and you don’t want to risk wasting the rest? Here’s an old-time solution!
Judge Beach lived and consumed wine before the days of modern preserving devices that take the oxygen off your bottle of wine. He would save a half -sized bottle from a previous occasion and rinse it out. Then, when he had a nice bottle that he wanted to drink half of and save the rest for later, he would open the bottle and immediately decant half of it into the small bottle and put a cork in it. A full bottle ALWAYS keeps better than a bottle with a lot of air space in it.
He could enjoy his wine without feeling guilty about wasting half of it. The wine in the small bottle would keep nicely for 4 or 5 days.
